Ryan Cole, the acclaimed chef behind Salsify at the Roundhouse, is set to open his second restaurant in Cape Town, COY, in August 2024.

Located within the bustling V&A Waterfront precinct, just a few steps from the Time Out Market Cape Town, COY will showcase Cole’s unique approach to understated fine dining.

‘At COY, we will offer an ocean-inspired exploration of African produce, age-old preparation techniques, and forgotten ingredients,’ Cole explains.
‘With the ocean on our doorstep and the mountain providing a stunning backdrop, it’s natural to draw inspiration from both.’
Cole, who won the 2023 Eat Out Woolworths Financial Services Chef of the Year Award, has a deep connection to the ocean. Growing up in a family of fishermen, he often spends his days off fishing in the Atlantic Ocean, using his catch to create inspired dishes at Salsify.
At COY, expect a similar focus on sustainable, ethical, seasonal and locally sourced ingredients. Working alongside head chefs Geoffrey Abrahams and Teenola Govender, Cole aims to create a menu rich in seafood, trendy ferments, heritage ingredients and traditional African cooking techniques.
According to TimeOut, the new space, designed by Cape Town-based KT Interiors, offers a contemporary yet understated atmosphere that reflects COY’s African identity and oceanic theme.
The design also maximises views of the surrounding mountain and sea.
